We spend a lot of time in our beds, and babies send even more time in theirs, so having your skin rubbing up against organic bedding is much safer than non-organic. It's the same as with clothing, your skin absorbs chemicals that are on your clothing and your bedding, and for babies, who spend up to 20 hours sleeping, that would result in a lot of chemical absorption.
