One of my Earth Day invitations was to Rouge Tomate, a restaurant located in midtown Manhattan. Unfortunately, being stuck in St. Louis, I wasn't able to make it (hopefully I will get a chance the next time I visit my family). Rouge Tomate features delicious modern American cuisine that naturally marries thoughtful, well-executed dishes with authentic nutrition featuring seasonal and local ingredients.
A member of the Green Restaurant Association, Rouge Tomate reduces its carbon footprint by choosing ecological materials from recycled or recyclable elements, using Forest Stewardship Council certified wood for floor and furniture wherever possible, using energy-efficient equipment, giving preference to local and seasonable products, buying meats and poultry from farmers who feed animals with local plants, and selecting some wines by viticulturists who follow organic and biodynamic principles.
Live in or near Manhattan? Rouge Tomate is holding some cooking classes that my be of interest to you. Staff Culinary Nutritionist Natalia Rusin and one of Rouge Tomate's sous chefs will teach you how to make the most delicious and nutritious outdoor summer fare food in the world…or the park…or the yard…or wherever you choose to enjoy it.

Hi,
I just discovered your blog. Interesting topic. Personally, I _TRY_ to go organic, but it's just not that easy (hence the TRY). And some days, it's just too expensive.
I like your articles, though. Thanks.

I love restaurants like these. There is a local restaurant in Baltimore called Woodbury Kitchen that follows many of the same principles. It's great to see restaurants are switching to using fresh local foods and trying to make their business more eco-friendly.

Thanks for the post. You astonished me
I am also a lover of such restaurants. Once I was at Rouge Tomate, it is unforgottable. Just like the paradise. The time I spent there was the best time in my life.
