Enchilada
I wasn't planning on posting another recipe today, but I love spicy food and had to share this one because it's not often you see a meatless Mexican recipe (unless I don't look hard enough?). This one, mostly thanks to the tortillas, is a higher in calories then yesterday's recipe, but I still think it's not too bad. June 9th: Updated the picture to the actual recipe before cooking. I added tomatoes to the top and used a Mexican cheese blend. Yumm!

Ingredients

  • Enchilada Sauce (recipe below)
  • 1 tbsp. vegetable oil
  • 12 non-fat flour tortillas
  • 2 cups low-fat mild cheddar
  • 1 cup finely chopped onion
  • 1/2 tsp. salt

Directions

Heat oven to 375F. Prepare enchilada sauce (directions below). Heat oil in a skillet; dip each tortilla in oil, then into enchilada sauce. Mix cheese, onion, and salt. Place large spoonfuls of cheese mixture on tortillas and roll up.

Place rolls in ungreased baking dish, 13 1/2 x 9 x 2 or 11 3/4 x 7 1/2 x 1 3/4 inches. Pour remaining enchilada sauce over tortillas and sprinkle with remaining cheese mixture. Bake until heated through, 20 to 30 minutes.

Enchilada Sauce

Ingredients

  • 2 tbsp. butter
  • 2 tbsp. finely chopped onion
  • 1 tbsp. flour
  • 1 clove garlic, finely chopped
  • 1 tsp. salt
  • 2 tsp. chili powder
  • 1 can (16 oz.) tomatoes
  • 1/4 tsp. Tabasco sauce

Directions

Melt butter in skillet. Add onion, cook until tender. Stir in flour, garlic, salt, and chili powder. Cook, stirring constantly, until bubbly. Remove from heat, stir in tomatoes and Tabasco sauce. Heat to boiling, stirring constantly. Boil and stir 1 minute.

SmartPeople's nutrition tracker calculates this recipe to have a total of 1991 calories and 55 grams of fat. Divide that up into 4 servings of 3 tortillas each, and that's 497.75 calories and 13.75 grams of fat per serving. Bear in mind that if you substitute regular 7-8 inch flour tortillas for the non-fat ones, this increases to 720.5 calories and 24 grams of fat per serving (if a serving is 3 tortillas)... a pretty significant increase.
