Wondering if this would be good served with a light cream sauce or a kind of Alfredo-type sauce over it. I thinly sliced tomatoes and put on top. Makes it look pretty- and probably some flavor, too!

Veganism is not a diet but a lifestyle.

Vegetarian according to the free dictonary:
vegetarian - eater of fruits and grains and nuts; someone who eats no meat or fish or (often) any animal products.

In real dictonaries you'll find that the often has been left away.

I don't want to be rude but I do have something on my mind.

When will we stop calling recipes that use dairy or egg products VEGETARIAN. If you wish call it lacto-ovo vegetarian but do not call it simply vegetarian.

A vegetarian diet does not use animal products (what includes dairy and eggs).

Sounds pretty nice, any chance of a pic of the final product?

My girlfriend has slowly been turning me more and more vegan (She writes a at My Vegan Planet, she has been a vegan shef for a while!) This does however mean that I have to keep an eye out for veggie recipes like this for her, she loves to learn new things!

This sounds pretty good. I might try my own twist by substituting the cottage cheese with cheddar cheese. I know its less healthy...but I'm sure it tastes gooood!
